Knox alum buys family restaurant

Elvith Santoyo is a young woman with big dreams. Just 25 years old, the June Knox College graduate is assuming ownership of Acapulco Restaurant, 1576 N. Henderson St. The business, which opened in 2006, was formerly owned by her parents, Victor and Maria Santoyo.

The new owner has worked at the restaurant featuring southeastern Mexican cuisine since it opened, She is having the interior and exterior repainted. It has been closed since July 4. The goal is to reopen Thursday. Her parents were ready to retire. “They were just planning on closing down,” Santoyo said.
