Sam Jarvis has served Knox County as its director of health protection since November 2013. The 27-year-old Knox College graduate started as a health department intern while he worked to earn a master’s in public health and emergency management from Western Illinois University.
Jarvis and rest of his department initiated a quality improvement plan in January and put the temporary food service application process squarely in their sights… “When problems are found, we work with the [food stand] vendors and walk them through the corrective process. There are a lot of ways people can be sickened — but all of it can be avoided by following a relatively few guidelines.”
